recipe: almond pancakes

My love for food is big and I also really enjoy cooking and baking. Lately, I've been really into trying out alternatives to dairy and wheat, as I find that dairy and wheat disagrees with my stomach and makes my skin worse, which are both things that I like to avoid. I've also undoubtedly been inspired by blogs and pinterest and so on. I really like trying out new things, and the internet is such a great place for finding inspiration.

These pancakes are a result of my love for almond. Of all the alternative milks I've tried, almond milk is by far my favourite, and I'm really fond of almond flour flour as well. There's just something special about that warm and nutty flavour. My mouth is almost watering as I'm writing this! Anyhow, I thought I'd share the recipe for these bad boys.

For one hungry (that's me in the mornings...) individual:

1 egg, separated in yolk and white
75 ml almond milk
75 ml almond flour
1 tsp baking powder
1 tsp sugar

Whisk together flour, baking powder and sugar in a bowl.
In a separate bowl, whisk the egg white until stiff.
Mix in egg yolk and almond milk to flour mix.
Carefully fold in egg white.
Fry on medium heat with a little bit of oil, for 2-3 minutes on each side. They might be a bit hard to flip.
And enjoy with whatever you prefer! On the picture above I chose raspberry jam, but I imagine they'd be delicious with all kinds of fruit or any other type of jam, or even
